**Winner: Cheapest Meal of the Week**
We had lots of leftover taco soup, so I made some quesadillas to go with it. I found three opened packages of tortillas in the fridge, two of which were past their expiration date and one that didn't have a date. So I decided to make all of them before they had a chance to go bad. I just made cheese quesadillas because I thought Doris would be most likely to eat this. I also made some guacamole with the avocado that Doris insisted we buy at the grocery store. Just squished up an avocado with some lemon juice. We also have a n open bag of Trader Joe's spicy soy and lentil chips so I put those out too.
Doris actually took a few bites of the quesadilla, more than she normally does. But not a lot. But she insisted on eating quesadilla for lunch today so we'll see how that goes. I gave her a bowl of soup with just corn, no tomatoes, and she ate a bit but not much. And she didn't want any guacomole even though she insisted we buy the avocado. That's fine because we liked it anyway so it was not a waste.
